Directions
This low-calorie quinoa salad is refreshing and rich in protein because of quinoa and cottage cheese.
It is prepared quickly and easily, it is great for dinner, you can refresh yourself during the day, or as an appetizer to the main meal.
You can use green salad of your choice.
My suggestion is a combination of spinach and arugula.

Ingredients
100 grams of cooked quinoa
100 grams of spinach and arugula mix
100 grams of cottage cheese
1 chopped tomato medium size
50 grams of raw peanuts
a few olives
seeds of your choice (my suggestion is a mix of pumpkin, sunflower, poppy and chia seeds)
2 tbsp olive oil
you can also add capers for saltiness
Finely chop the tomato into cubes, clean from the seeds.
Precook the quinoa and cool it before adding it to the salad.
Mix the arugula and spinach, and add to a serving bowl. In a separate bowl, add the quinoa, tomato, peanuts, cottage cheese, mix and topped over green salad. Finally, add olive oil and sprinkle with mix seeds.
If desired, you can add capers. You can replace the cottage cheese with cheese. Do not add salt, due to the saltiness of the olives, cottage cheese and capers. Mix and enjoy the flavors.
