Profiteroles with a unique rustic look, easy to prepare, which you can shape with just a spoon. They have a light taste, with a smooth silky filling of vanilla pudding and white chocolate.
The preparation of these profiteroles has always been prepared by my mother with a spoon, and maybe out of habit, but I did not want to change this style until today, and for me, each profiterole is special and unique in appearance.
So far I have tried many recipes, with butter, with olive oil, etc., but this one is definitely an irreplaceable recipe for me, and all my guests love it.
Dough ingredients
150 grams of all-purpose flour
250 ml of water
125 ml of sunflower oil
3 large size eggs/ 4 medium size eggs
Ingredients for the filling
80 grams of vanilla pudding (two packages)
900 ml of milk
4 tablespoons of sugar
50 grams of white chocolate
For dressing
melted dark chocolate
Preparation of filling
Start by preparing the filling so it can cool while you bake the profiteroles.
In a bowl, mix the vanilla pudding powder with 4 tablespoons of sugar and add 12 spoons of milk to it, mix until the sugar and pudding are completely dissolved. Then add the milk to a pot on medium heat and immediately add the whipped liquid from the pudding. It is best to use a wire whisk to have a smooth texture of the filling and stir constantly. Stir the filling occasionally at the beginning at a medium temperature so that lumps do not form and the milk does not burn. After it starts to thicken, stir constantly. Don’t rush the filling because it will round out the whole flavor in the end. Once it starts bubbling, it takes about 10 minutes to get a nice thickness, cook on low heat with constant stirring. At the end, add the white chocolate and remove from the heat. Stir until the chocolate melts and cover the filling with plastic wrap directly over the entire surface to keep the filling soft and not form a crust. Let it cool at room temperature or in the refrigerator. Before you fill the profiteroles, mix the filling with a hand mixer and transfer it to a plastic bag to make it easier to fill them.
Preparation of dough
Add the oil and water to a pot on the fire. Let them boil and immediately remove them. Add the flour to them and beat briefly with a mixer to get a smooth mixture. Leave the dough for a few minutes at room temperature. Then add one egg and mix with a mixer. When the egg becomes even in the dough. Add the eggs one at a time and mix until smooth. Depending on the size of the eggs you will need 3 large or 4 medium sized.
After preparation, take a small spoonful of the mixture and add the profiteroles to the oil-coated pan at a distance because they will increase enough so that they don’t stick to each other.
Bake them at 200 degrees for 20 minutes, without opening the oven, reduce to 150 degrees and bake for another 10 minutes.
Fill them with the filling, and cover them with melted chocolate.
Sprinkle with chopped almonds or pistachios if desired.
