These oat crackers with seeds and thyme are light, healthy, and delightfully crunchy. They are perfect as a side for vegan spreads, salads, or simply as a wholesome snack.

🧾 Ingredients
- 120 g finely ground rolled oats
- 40 g flour (all-purpose or whole wheat)
- 1 tbsp sesame seeds
- 1 tbsp ground flaxseed
- 1 tsp chia seeds
- ¼ tsp salt
- ½ tsp dried thyme
- 2 tbsp sunflower or olive oil
- 90–100 ml water or plant-based milk
👩🍳 Instructions
- In a bowl, mix the oats, flour, seeds, and salt.
- Add the thyme last so it remains visible.
- Add the oil and gradually add liquid until you get a soft, non-sticky dough.
- Let the dough rest for 10 minutes.
- Roll out the dough very thin (about 2 mm) between two sheets of baking paper.
- Cut into crackers in your desired shape and prick each one with a fork.
- Optionally, sprinkle a little more sesame and thyme on top (without salt).
- Bake in a preheated oven at 175–180°C (350°F) for 15–18 minutes, until lightly golden.
- Remove and let cool completely – this ensures maximum crunchiness.
