This simple cake with a wonderful lemon aroma and light yellow texture, if you prepare it, you can have it at hand in any part of the day with tea or coffee.

 The easy and quick preparation of two minutes makes it desirable and you can prepare it even when you are short on time. All you need is a wire whisk, to mix the dry ingredients with the liquid ingredients and leave it to bake in the oven at 150 degrees.

At the end, drizzle it with a mixture of fresh lemon that will complement it with flavor and aroma.

 Follow all the details below.

 

Ingredients and Preparation

 4 large eggs

 200 grams of all-purpose flour

 110 grams of granulated sugar

 200 ml of sunflower oil (or grape seed oil)

 8 grams of  baking powder

 a pinch of salt

 2 tbsp vanilla extract

 grated zest of 1 lemon

 For the dressing

 6 tablespoons of powdered sugar

 2 tablespoons of fresh lemon juice

 1/2 tablespoon of dry rose petals

In a bowl, beat the eggs with a whisk until smooth and add the sugar, vanilla extract, sunflower oil and the zest of one lemon. Mix for a few seconds to smooth the ingredients.

After mixing the liquid ingredients, add the dry ingredients to them.

Sift the flour, add the baking powder, salt to the flour, mix until combine all together and add them to the bowl of the liquid ingredients. Beat with a whisk and you will get a nice caramel texture with a light yellow color.

Transfer the mixture to an oiled mold and bake for 45 minutes in a heated oven at 150 degrees. Check the dough with a toothpick at the end if it is done (doesn’t stick if it is nicely baked on the inside)

 To bake this cake, you can use a mold of your choice, depending on the shape of the mold, you can get an oval, rectangular shape, or you can use a ball mold and have a unique shape.

 Let it cool for 5 minutes and pour the dressing over it.

Prepare the dressing from 3 tablespoons of fresh lemon juice, 8 tablespoons of powdered sugar and 1/2 teaspoon of crushed dried rose petals. Mix all the ingredients with a spoon and pour over the warm cake.

 If you don’t have roses, you can decorate with slices of lemon or grated lemon zest at the end.
