Lemon cake with a dressing of fresh lemon juice, with a wonderful aroma and sour refreshing taste, which is enough to prepare once and it can be your favorite cake, and your guests will love it without hesitation.
The easy and quick preparation of two minutes makes this lemon cake desirable and you can prepare it even when you are short on time.
All you need is a wire whisk, mix the dry ingredients with the liquid ingredients and leave it to bake in the oven at 150 degrees.
The drizzle of fresh lemon juice will complement it with taste and aroma at the end.
Ingredients and Preparation
4 eggs (large)
200 grams all purpose flour
200 ml sunflower oil
110 grams granulated sugar
8 grams baking powder
1/2 tsp salt
2 tbsp vanilla extract
grated zest of 2 lemons
For dressing
1/2 cup of powdered sugar (150 grams)
5 tablespoons of fresh lemon juice
2 tablespoons of milk
In a bowl, beat the eggs with a whisk until smooth and add the sugar, oil, and vanilla extract to them. Mix for a few seconds to incorporate the ingredients.
After mixing the liquid ingredients, add the dry ingredients to them.
Sift the flour, add the baking powder and salt to it, mix and add to the bowl of the liquid ingredients. Grind the zest of two fresh lemons and add it the mixture at the end. Beat with a whisk shortly until you will get a nice caramel texture with a light yellow color.
Transfer the mixture to a mold coated with oil and lightly floured so that it does not stick and bake for 45 minutes in a preheated oven at 150 degrees. Check the dough with a toothpick at the end if it is done (doesn’t stick if it is nicely baked on the inside).
To bake this cake, you can use a mold of your choice, depending on the shape of the mold, you can get an oval, rectangular shape, or you can use a ball mold and have a unique shape.
After removing the cake from the oven, pierce it with a toothpick and pour it while it is still warm with a dressing of 5 tablespoons of lemon juice and 5 tablespoons of powdered sugar. Be sure to add this dressing until the cake is warm to have a nice aroma and too became moist from the inside.
Allow the cake to cool completely or for at least 15 minutes and add the dressing described above from 1/2 cup of powdered sugar (150 grams), 5 tablespoons of lemon juice and 2 tablespoons of milk.
Mix all the ingredients with a spoon and pour it over the cake.
Decorate with a slice of lemon and menthol mint.
Leave this cake to rest for some time before cutting.
Keep the cake in the fridges covered with plastic foil to keep the aroma and moist structure. Have in mind that with standing in the fridge this cake next day is becoming more delicious.
