My favorite Traditional recipe, a dessert of grated quince with walnuts according to my mother’s recipe, with a beautiful light golden color and a citrus fragrance.

When I am preparing this homemade sweet pleasure in each jar i always add one leaf of the healthy herb called ” Slatkarce” or known by the latin name pelargonium odoratissimum.

This essential herb and flower has a strong fragrance and boosts immunity when inhaled. It is not required, but if you can find or have the herb at home, it will complete the flavor of the sweet.

 

 

If you add chopped walnuts in quarters, it will further enrich the taste of the dessert and you will have golden reserves for the upcoming winter.

What to pay attention to get a nice golden color and how to successfully prepare the syrup to get a nice density of the sweet, follow the preparation and you won’t go wrong.

The shade of the color of this sweet jam depends on the quinces, and to have a stronger fragrance I recommend you to use those quinces with hairs on the surface, they are better than the smooth ones.

When you pick the quinces, make sure they are healthy and without spots.

The color of the quince jam can vary from light golden to reddish depending on the quince.

Syrup Preparation

Start by preparing the syrup.
n a larger pot where you will cook the quinces, add the sugar and add water to it. Add 650 grams of water to 1200 grams of sugar and put on fire. Stir immediately with a whisk to dissolve the sugar before it boils. When it boils, reduce the temperature to low-medium heat, stirring the syrup occasionally. Sufficient preparation time is 8 to 10 minutes. During this time syrup will thicken and clear to transparent.
Carefully peel and clean the quinces so they don't have spots because they will show up when is completed.
After peeling, grate each quince and immediately add lemon juice to prevent the quince from darkening.
Since they change their color very quickly, it is best if you prepare fresh lemon juice before.

Jam Preparation

Add the grated quinces to the syrup and start by cooking on low medium heat for 30 minutes.
Stir constantly. Remove the foam from the surface while the dessert is cooking.
During cooking, the color will change from light to darker. Cook, stirring occasionally, until it thickens and turns into a nice golden color and then remove from heat.
Add the chopped walnuts to the dessert, mix and let it cool.
Thirty minutes of cooking at a low-medium temperature is quite enough time for the dessert, while keeping in mind that the dessert will acquire a more intense and stronger color when cooled than the color it has while it is still warm.
Allow to cool completely and then transfer to clean sterile jars.
You can sterilize the jars in an oven at a temperature of 120 degrees for 20 minutes.
Before sealing, add lemon slices and herb leaves to each jar.
Enjoy this delicious sweet in winter!
