Ingredients
90 grams of a mix of seeds (of your choice)
360 grams of bread flour
85 grams of oatmeal
360 ml of hot water
20 grams of butter (room temperature)
7 grams of yeast
1 spoon of honey
1 tablespoon of salt
Preparation
Start by preparing the oatmeals. Boil the water and add it to the oatmeal until is still hot. Leave them for about five minutes to reduce the temperature to tepid about 40 degrees, then add a spoonful of honey and the yeast. Do not add the yeast and honey immediately while the water is very hot so as not to destroy the yeast. Then add the butter at room temperature and mix until butter and other ingredients combine.
In separate bowl mix all dry ingredients. Add the salt, seeds and oatmeal to the flour.
The flour can be bread flour or half cornmeal if you prefer.
After mixing all the ingredients with a spoon add them to the bowl of oatmeal.
Mix well with a spoon until the flour is absorbed and cover to rest for for fifteen minutes.
Then shape the dough into a ball on a floured surface, or you can divide it into two halves for two smaller buns.
Coat smaller fireproof dishes or a smaller pan and add the dough.
Brush the surface with beaten egg and sprinkle with seeds and oat flakes, press to stick well.
Let the bun rise nicely like this for about two hours.
Bake at 180 degrees for 25 minutes.
Have a good appetite.
