Flavorsome Grated Quince Jam with walnuts by my mother recipe with amazingly scent is unique because of the healthy herb pelargonium odoratissimum.

This special essential herb and flower with strong calming scent boost immunity when we inhale.

Is not necessary but if you can find or if you have at home it will complete the flavor of this jam.

Walnuts nicely will fit with quince taste and will be golden reserves for upcoming winter.

Grating Quince

Carefully peel and clean every fresh quince.
As you grated, to every quince is good too add lemon juice to prevent quince to get dark color.
They are know buy changing their color so fast and is best if you prepare fresh lemon juice on time.
When you finish with grating transfer them into large pan depending how much you would like to make, and plan to have enough space because of the sugar.

Cooking

Preparation of sugar syrup is from 1200 grams sugar and 2 cups of cold water.
Add sugar and water in pot on high heat and bring to boil. Cook 8 minutes on low medium heat.
Check your syrup if is ready with the spoon. Here is one tips.
Syrup drops should fall slowly from the spoon when the syrup is ready.
Add grated quince in the syrup and cook on low medium heat for 30 minutes.
Stir constantly and take out the foam from the surface until cooking.
When it thickens and get a nice color add walnuts, mix and take from the heat.
Be carefully not to overcook the jam.
Leave to cool complete and transfer in clean sterilized jars.
Before closing add two leaves from the herb in every jar.
Enjoy in this delicious jam in the winter !
