Elderflower jam in small jars can be a lovely gift or a delicious sweet delight added to ice cream, pancakes or many other desserts.
This aromatic flowers are mostly used for elderflower syrup, which is not only tasty but also a very healthy refreshing drink. This season flowers are blooming usually in July and in this short period you can harvest and prepared them. As delicious jam they can be preserved for a long period and you can use it in many ways. This jam has a special taste and a very strong adorable aroma.
You can get 450 grams of jam from 12 elderflowers
Recipe and Preparation
12 springs of elderflowers
800 ml of water
500 grams of sugar
fresh juice of 1/2 lemon
zest of one lemon
Start by preparing the syrup. Mix the water and sugar in a pot and add them on medium heat to boil the syrup. After the sugar melts and the syrup becomes clear, take it off the heat and add the elderflowers and the grated zest of one lemon. Clean the flowers beforehand and separate them into small flowers, wash them thoroughly and let them drain. Then add them to the syrup, mix well with wooden spoon and cook them on low medium heat. When the syrup boils add the juice of half a lemon and let it boil for 20 to 30 minutes.
Pour the cooked jam into small sterile jars while the syrup is still warm, turn the jars upside down to cool completely. You can keep this jam whole year for occasions when you need to prepare many delicious desserts.
