Homemade French fries well seasoned and crispy from the outside, and soft from the inside. Few medium size potatoes and four spices is all you need. When you buy potatoes need to know that there is a difference in potatoes for baking and frying. Best way is when you are buying from the green market to ask for potato for frying with nice shape and size. Cutting potatoes is really important to have soft structure from the inside and crispiness from the outside.

Follow some tips and you will have best homemade French fries you have ever tried. Your friend’s and family will ask for more with no doubt.

Preparation

Pill and clean well four potatoes medium size. Every potato cut on the long side into three pieces and each piece cut to thickness of one centimetar. Remove the ends for better shape, and prepare them at the end, separately from bigger pieces because they will fried faster and can be burnt.
Leave it in cold water for 15 minutes, because on this way you will get soft structure from the inside.
Drain the excess water on a kitchen towel or kitchen paper, and you are ready for frying.

Frying

Frying is best if is made in fryer, but also can be made in a pan too. Add one piece to try if the oil is ready. Depending of your pan or fryer, fry half of potatoes for 5 minutes and then carefully transfer them on a kitchen paper.
Leave them to cool down for five minutes, and in the meanwhile you can prepare other half.
After five minutes add them to fry for second time around 5 minutes.
Be careful at the end because they can be burnt fast. Check for the crispness as you like the most.
Add to kitchen paper to excess the oil and until they are still hot add in the spices mixture.
For spicy mixture you need black pepper, garlic powder, onion powder, chili for spiciness or red paprika if you don't like spicy, and salt. Add one tbsp from every spice, or if you are spicy lover you can add 2 tbsp from every one or can combine as you like.
Mix all spices together in one bowl and add potatoes until still warm and mix all together.
Don't worry if you add more spices, because spices will stick as needed.
Enjoy in the crispiness and spiciness of this delicious French fries!
