Creamy mashed potatoes with leeks is a delicious dish that goes well with chicken. You will get the tastiest mashed potatoes from old (sandy) potatoes, if you boil them whole, because in pieces they absorb water more easily and in this way the mashed potatoes will become mushy and less creamy.
You can wash the potatoes well and boil them in their skins, or peel them and boil them whole.
One of the most important ingredients for a delicious creamy puree is the butter that makes the puree silky, and which should be at room temperature, slightly softened, and the milk is best added warm if you want the puree to be warm when you serve it, or simply until serving, you can keep it in the oven or on a warm stove.
Always add salt at the end to taste.
The leeks in this recipe are prepared separately and added at the end to the prepared puree.

Ingredients for preparing puree
4 potatoes (medium size)
1/2 cup of milk
100 grams of unsalted butter
black pepper to taste
1 teaspoon of sea salt
To prepare the leeks
1 stalk of leek
2 tablespoons of olive oil
1/2 teaspoon of salt
Wash the potatoes well, peel them and put them to boil. While they are cooking, start preparing the leeks. Finely chop one stalk of leek, add it to a pan with the oil and fry on medium heat until soft.
Before the end, add a little water and fry until the water evaporates. In this way, you will get softer and tastier leeks. Set the leeks aside while you prepare the puree.
Mash the boiled potatoes well, while adding the butter twice. The added butter makes the potatoes silky and helps with an even creamier texture. You can add more butter than the recipe and you will certainly not regret it because it will enrich the taste of the puree. After adding the butter, add the milk gradually, that way you will control the density you want.
At the end, add the prepared leek, black pepper to taste and mix well.
Add salt at the end if desired.
This dish is really tasty, but if you wish, I recommend that you sometimes serve it with a fried chicken or pork.
If you want the mashed potatoes to stay warm until serving, cover it and place it in a warm oven or on a warm stove until serving.
