Ajvarita – Aivar pizza inspired by the Neapolitan pizza Margherita.
Ajvarita is a unique pizza, with the taste and aroma of smoky paprika, simple, which you definitely deserve to try in the ajvar season.
How did Aivarita pizza was inspired?
The idea came to me by accident while preparing a Napoletan pizza, and I decided to add the homemade ajvar spread made week ago. I completely replaced the tomato sauce and decided to use only ajvar spread as base.
I kept the mozzarella cheese and parmesan cheese, and added some fresh red ajvar pepper because I had it at home.
And while I was preparing it, the name Ajvarita came to my mind, so yes, why not, shortened from margarita, replaced by ajvar. Why not a new variant of Italian Neapolitan pizza adapted to the Macedonian way
And so it became something new and unique, and a song Macedonian girl instrumental version was added to it, and the video for this pizza won me with no doubt.

I highly recommend it to you to try this pizza, and while I’m writing the text another name came to mind, Ajvarita – Makedonita as a second variant that complements Ajvarita.
Let Ajvar spread, as an authentic Macedonian brand, be the reason to renew it and see it in a new guise as a spread on something that can be widely distributed.
You may agree with me, you may not, but let this recipe and text testify to an inspiration and an idea that can give you inspiration for something different.
Ingredients for two pizzas
Neapolitan dough for 2 pizzas (250-280 grams for one pizza)
250 g of mozzarella cheese
6 spoons of ajvar spread
1 fresh Ajvar red paprika
3 tablespoons of grated Parmesan cheese
fresh basil leaves
olive oil
Spread the stretched dough with ajvar, 3 spoons per pizza. Then add slices of 125 grams of mozzarella for one pizza and distribute freshly chopped pieces of red paprika.
Grate parmesan cheese and bake in a heated oven.
At the end, pour a little olive oil on the ends of the dough and add fresh basil leaves for taste and decoration.
