Tarator is a healthy and refreshing salad, traditionally prepared in Macedonian homes, especially during warm summer days. It is often served as a side dish with fresh or toasted bread.
The combination of fresh cucumber, aromatic herbs, and garlic gives a pleasantly cool and refreshing taste.
Ingredients
- 1 fresh cucumber, diced
- 500 ml yogurt (sheep’s or cow’s)
- 2 garlic cloves, crushed
- 50 g walnuts, chopped
- A pinch of sea salt
- A few fresh parsley and basil leaves
Instructions
- Prepare the cucumber:
Peel and dice the cucumber into small cubes. - Crush the aromatics:
In a deep bowl, crush the garlic with a pinch of salt. Add the fresh parsley and basil leaves and continue crushing until they release their aromas and juices. - Combine with yogurt:
Whisk the yogurt until smooth, then add it to the bowl with the garlic and herbs. - Add walnuts:
Finally, add the chopped walnuts and gently mix.
- Serve:
Serve with a slice of fresh or toasted bread. Tarator can be enjoyed as a light evening salad or a refreshing meal at any time of the day.
Tip: This salad tastes best chilled, so refrigerate briefly before serving.
