Tarator is a healthy and refreshing salad, traditionally prepared in Macedonian homes, especially during warm summer days. It is often served as a side dish with fresh or toasted bread.

The combination of fresh cucumber, aromatic herbs, and garlic gives a pleasantly cool and refreshing taste.


🛒 Ingredients

  • 1 fresh cucumber, diced
  • 500 ml yogurt (sheep’s or cow’s)
  • 2 garlic cloves, crushed
  • 50 g walnuts, chopped
  • A pinch of sea salt
  • A few fresh parsley and basil leaves

👩‍🍳 Instructions

  1. Prepare the cucumber:
    Peel and dice the cucumber into small cubes.
  2. Crush the aromatics:
    In a deep bowl, crush the garlic with a pinch of salt. Add the fresh parsley and basil leaves and continue crushing until they release their aromas and juices.
  3. Combine with yogurt:
    Whisk the yogurt until smooth, then add it to the bowl with the garlic and herbs.
  4. Add walnuts:
    Finally, add the chopped walnuts and gently mix.
  5. Serve:
    Serve with a slice of fresh or toasted bread. Tarator can be enjoyed as a light evening salad or a refreshing meal at any time of the day.

💡 Tip: This salad tastes best chilled, so refrigerate briefly before serving.
