🌿 Arugula Pesto

📝 Ingredients

  • 1 full cup fresh arugula (about 30–40 g)
  • ½ cup walnuts (lightly toasted for a deeper flavor, optional)
  • ½ cup Greek yogurt or sour milk (about 120 ml – for creaminess)
  • ¼ cup grated Parmesan cheese (about 25–30 g)
  • 2–3 tablespoons olive oil
  • Salt and freshly ground black pepper (to taste)

🥣 Preparation

In a blender or food processor, add the arugula, walnuts, chopped Parmesan, and yogurt. Add salt and pepper to taste.

Start blending, gradually adding the olive oil until the mixture becomes creamy and smooth.
If needed, add 1–2 tablespoons of water to adjust the texture.

Taste the pesto and adjust salt/pepper if necessary.
