Tarator is a healthy and refreshing summer salad, traditionally prepared in our homes for generations. My grandmother and mother used to make it with yogurt during hot summer days, serving it as a light salad with a slice of fresh or toasted bread.
The combination of fresh cucumber, aromatic herbs, and crushed garlic instantly refreshes the body and creates a pleasant cooling sensation – perfect for summer temperatures above 30°C or even 40°C.
Ingredients
- 1 cucumber (diced)
- 500 ml yogurt (sheep’s or cow’s)
- 2 garlic cloves (crushed)
- 50 g walnuts (chopped)
- A pinch of sea salt
- Fresh parsley and basil leaves
Preparation
Peel the cucumber and cut it into small cubes. In a deep bowl, crush the garlic cloves with a pinch of sea salt. Add the fresh parsley and basil leaves and continue crushing until the herbs release their aroma and juices.
Whisk the yogurt until smooth and add it to the mixture. Finally, add the chopped walnuts, mix well, and serve with a slice of toasted bread.
Tarator can be enjoyed as a light evening salad or as a refreshing meal at any time of the day.
