🌼Naturally refreshing herbal drink with light fizziness

This homemade Bitter Lemon is a natural version of the classic drink – with the same color, distinct bitter flavor, and fresh aroma, even with a subtle natural fizziness. It can easily become a family favorite, made with simple ingredients and a healthy herb that can be found and harvested throughout the summer.

The base of this drink is white yarrow (Achillea millefolium), a plant with a long tradition in folk culture and herbal cuisine.


A Touch of Tradition and Legend

There is an old legend associated with this herb. When Achilles conquered Troy and was struck in the heel with a poisoned arrow, the goddess Aphrodite advised him to use this very herb to reduce the pain and heal the wound. Hence its Latin name – Achillea.


Responsible Harvesting

Only the flowers are harvested, leaving the stem and roots in the ground so the plant can regrow and provide harvest again next season – honoring nature and its cycle 🌱

Recipe – Simple and Adjustable

Basic Ratio

  • 5–7 g fresh yarrow flowers
    (or 2–3 g dried)
  • 1 liter water

This ratio produces a moderately bitter and pleasantly refreshing flavor, perfect for everyday enjoyment.


Optional Additions

  • 1–2 slices of lemon or lemon peel
  • 1–2 teaspoons honey or sugar (to taste, optional)

Preparation

1. Prepare the herb
Gently rinse the yarrow flowers and use only the flowers, avoiding the stems.

2. Mix
Place the flowers in a glass bottle or jar and pour in 1 liter of room-temperature water.

3. Add flavor
For a Bitter Lemon note, add lemon slices or peel. Optionally, add a little honey or sugar to balance the bitterness.

4. Let it infuse
Leave the container at room temperature with a loosely closed or partially open lid, allowing it to breathe naturally.
Let it sit for 2–4 days, depending on your desired intensity.

5. Taste and adjust
Check the flavor daily and adjust:

  • milder taste → shorter infusion
  • stronger bitterness → longer infusion

6. Strain and store
Strain the drink and store it in the fridge. Serve chilled.


How to Adjust Flavor

  • Milder drink → 3–4 g fresh yarrow / 1 L water
  • Stronger flavor → 8–10 g fresh yarrow / 1 L water
  • More lemon freshness → add more peel
  • Pure herbal taste → no sweetener

Notes

This recipe can also be made with dried yarrow, following the same method, though the flavor will be slightly more concentrated.
